Perhaps the most exciting foods to study, absorb, and appreciate are the most mundane. Although a rich and extravagant dish of Sautéed Foie Gras may be entertaining, it is not accompanied by any of the feelings which make dining such an internal pleasure. The feelings of nostalgia or the wholesome, comforting aspect of so many “down to earth” foods are lost in a fancy, overpriced restaurant that can make even a duchess feel dirty. The ordinary dish can be searched over and over again by a careful mouth for subtleties that only familiarity can permit. It is for this reason that a town’s quality pizza production should be evaluated. After all, Americans eat approximately 100 acres of pizza each day, or about 350 slices per second (National Association of Pizza Operators, NAPO).

After the Vietnam War, it took several years before veteran’s problems forced them into homelessness, but it took virtually no time to start seeing veterans from Iraq and Afghanistan.
